About the Process
Yeast Fermented Honey: The optimal block for coffee picking is chosen based on ripeness and quality, ensuring only fully ripe cherries are harvested. Defects such as unripe cherries and debris are removed, and a sample lot is taken to measure a Brix level of 27. Lighter fruits and foreign materials are eliminated through floater removal, and the denser cherries are double washed. After overnight storage in open-air tanks, the cherries are de-pulped without water to preserve mucilage.
The depulped coffee is placed in double-walled stainless steel tanks with added homemade red wine yeast for faster fermentation. Anaerobic fermentation occurs for 48 hours, followed by drying in a greenhouse on raised beds, where the coffee is raked hourly. The drying process starts thick for three days and then shifts to a thinner, slower method over 18 days.

This lot is a specialty Robusta from Salawara Estate. This Robusta coffee captivates with its rich aroma of toasted nuts and sweet caramel popcorn, creating a warm and inviting experience. The flavor is bold and robust, featuring prominent nutty notes paired with a delightful caramel-like sweetness. A slight bitterness adds depth, perfectly balancing the overall profile.
About the Origin
Salawara Estate, the name of which literally embodies "a string of blessings," was first established in the 1880's by colonial proprietors. The estate was consequently taken over by The YDN group, in whose care the estate has been for the past three generations. Today Sharan and Eshwar Gowda, third generation planters themselves, run the estate. Spread over 145 hectares of land, the estate is situated at the foothills of the Western Ghats, near the Sakleshpur and Belur regions of Karnataka. The specialty robusta grown at Salawara Estate is intercropped with produce such as pepper, areca nut, oranges and silver oak trees, which tied with the cross-pollinating nature of Robusta, provides food for thought in terms of sensory distinction. Surrounded by five man made lakes, Salawara estate practices sustainable irrigation which helps attract and provide for flora and fauna.
